![]() ![]() Add about 2 tablespoons of roughly chopped parsley, a drizzle (about 2 teaspoons) of red wine vinegar, a drizzle of olive oil, a sprinkling of kosher salt and black pepper. Peel and stem the peppers and then slice them into 1/2-inch strips. Poblano Pepper RelishĪfter steaming, the skins should peel off the peppers very easily. So now, let’s make the Poblano Pepper Relish. So we have our charred peppers steaming the sauce is simmering and the chicken is pounded into cutlets. Taste the sauce and add more kosher salt and/or black pepper to taste. Adjust the heat as needed to keep the sauce gently bubbling. Reduce the heat to low and let the sauce simmer. Stir and sauté for 30 seconds, then add one can of crushed tomatoes. Then add garlic and a good sprinkling of kosher salt. In a pan over medium heat, sauté the diced onion in about 2 tablespoons of olive oil until they are translucent. Cover the cutlets with plastic wrap and pound them to about 1/4-inch thick. Meanwhile you can slice 2 chicken breasts in half lengthwise to make 4 cutlets. Carefully move the oven rack back down to the center position and leave the broiler on. Let them steam undercover for 10 minutes. When the peppers are evenly blackened, pull them from the oven and cover the sheet pan with plastic wrap, or use tongs to transfer the peppers to a bowl and cover with plastic wrap. Keep your eye on them, turning them over as they blacken and char, to get an even charring. Place 3-4 Poblano Peppers on a sheet tray and place in the oven. Set the oven to broil and position an oven rack in the second from the top position, so the rack is about 6-inches away from the heating element. I already had this sandwich on my list for this week, so the addition of the roasted pepper relish was a no-brainer. He recently made a Chicken Parm Sandwich on his YouTube Show, Cookin’ Somethin’.
